400grams mix of dried beans. 4 tins of using cooked
2 Carrots
1 stick of celery
1 large onion
End cuts of roasted ham
1 tin of tomatoes
Guajillo, Chipotle & Pasilla Dried chillis
Cinnamon stick
📖Method
If using dried beans, leave them to soak in water overnight, before using, boil them in freshwater with a couple bay leaves for 45-minutes to an hour.
Preheat oven to 120degrees.
Whilst those are boiling, in a separate pan, soften diced celery, carrot and onion.
Once soft add your dried chilli (blitzed up), cinnamon stick and diced ham.
Pour in your stock, and add your beans. If you don't have enough stock you can top it up with the cooking water from the beans.
Cook for 5 minutes and then add tinned tomatoes and stir through.
Add a lid and slowly cook in the oven for 5hrs.
To finish, remove the lid and keep cooking for an additional 45 minutes until the liquid has reduced and the beans are thick.
Serve however you like! It makes for a great lunch on top of toast with a little cheese.
