Panzanella
Panzanella is a Tuscan bread and tomato-based salad, its a perfect way to use up any slightly stale bread and a really tasty summery dish. It's the ideal side for BBQs or summer picnics. Umberto and his friend Tom made it every day when we were on holiday, enjoyed as part of daily feasts in the sun and I now desperately want to be on holiday again.
🛒Ingredients
3/4 slices of stale sourdough/crusty/etc bread.
Handful of capers
8-10 Anchovies
2 - 3 roasted red peppers
4 Nice tomatoes,
Onions
Olive oil (4ish tablespoons)
Salt & pepper to taste
1 tablespoon of red wine vinegar
Fresh Basil
📖Method
Tear bread into bite-size chunks.
Chop tomatoes & peppers into equal-sized chunks as the bread.
Thinly slice your onions.
If using anchovies, you can either chop them at this point and mix through with everything else or add whole to the top when serving. We chop and mix because otherwise, I would probably be all like, oh no I don't like anchovies. 😅
Add all your ingredients to a large bowl and mix thoroughly. Better to use your hands, if you don't mind getting messy.
Leave it all to sit in the bowl for a little while. You want the bread to soak up the oil and vinegar, if it looks a little dry, add some more oil.
That's it! Serve.
