Pizza Peas

It's chickpeas, with everything you'd put on a pizza, it's pizza peas! Absolutely no idea if this makes it better for you, feel like its a possibility but it's tasty so who cares?!

🛒Ingredients

  • 660grams of chickpeas

  • 3 heaped teaspoons of ndjua

  • 2 handfuls of cherry tomatoes

  • 1 heaped teaspoon of tomato puree

  • 1 ball of mozzarella

  • Fresh Basil

  • Olive Oil.

📖Method

  • In a large pan heat a glug of olive oil on a medium heat

  • Add in the tomato puree and leave to fry off for a minute or two

  • Move the pan to a lower heat and add in the nduja, leave to melt. Once melted stir through with the tomato puree

  • Drain your chickpeas and add to a large bowl, slice cherry tomatoes and pour over your tomato and nduja mix.

  • Tear fresh basil and stir through the chickpeas.

  • If using a drier mozzarella you can dice this and stir through now, or alternatively if using fresh, either tear into smaller sections and mix through or tear into larger pieces and add to the top when serving

  • If its looking a little dry add in some more olive oil and mix through

  • To serve, spoon into bowls, top with a drizzle of olive oil, salt & pepper along with a little extra fresh basil
