Sausage and Onion Pasta
Sausage and Onion is a great combination, perfect on pizza and perfect through pasta too. This pasta dish is quick enough to do on a weeknight and tasty enough that you want to make it again and again
🛒Ingredients
250grams of spaghetti
1 medium onion
2 good quality pork sausages
Olive oil
Red wine vinegar
1tsp of dried oregano
Pinch of fennel seeds
1 clove of garlic, diced
Black Pepper
Parmesan to top
Pinch of chilli flakes
📖Method
In a large pan boil salted water for your pasta
Start by taking the sausage out of its casing and crumbling it up into bite-sized chunks
For the onion, cut into 6-8 segments, depending on the size of your onion, break apart a little.
Bring olive oil to a medium-high heat in a large deep-sided frying pan, once hot add in your sausage meat and fry until browned slightly.
Once browned, remove from the pan with a slotted spoon, keeping all the fat in the pan and set aside.
Add your onions to sausage fat, stir through and let cook down a little
Now would be a good time to get the pasta on.
Add your fennel, oregano, chilli flakes & garlic, stir through and continue to cook for about 5-10 minutes, until your onion and garlic are soft.
Re-add the sausage meat and cook again for 2-3 minutes.
Add cooked pasta to your pan, and stir through. Add a glug of olive oil & the red wine vinegar and make sure your spaghetti is well coated.
Serve with parmesan and a bit of black pepper.
