Very Good Guacamole
If you too are a millennial who prefers buying avocados to buying a home, then this is the guac for you. When I lived in the US I was so into basically anywhere that made your guacamole at the table. Even though you end up paying like $12 for one avocado. It's the showmanship to it. This is not $12 though, and you can make it tableside if you want I guess.
🛒Ingredients
1 large ripe avocado
1 Lime
1/2 Red chili
1/2 Tomato
Handful of Coriander
1/4 Medium Red onion
📖Method
Finely chop the onion into small little chunks.
Chop the tomato into roughly the same size, removing all watery pulp bits, you only want the flesh.
Finely chop red chill & keeping a few thin slices of chili for the top.
Separate coriander leaves and stalks. Finely chop the stalks and set the leaves aside.
Squeeze half a lime into a pestle and mortar, add a big pinch of the diced onions, coriander stalks, and salt and give it all a good bashing.
Scoop out half an avocado, and add to pestle & mortar and mash with a fork if soft enough, or pestle if not.
Add the other half and repeat until its all kind soft.
Add tomato, rest of the onion, and the coriander leaves and mix lightly with fork or spoon.
Give it a taste, and add more lime if you think it could do with it.
Top with a sprinkle of salt, coriander leaves, and chili slices.
